| Description: | The machine continuously tempered chocolate masses to the preselected temperature. The mass is pumped with a mass pump (not included in delivery) through the individual cooling or heat sections, in which scrapers ensure optimum heat exchange at the cooling surface. As cooling medium cold water is used, which is supplied to the cooling disks via solenoid valves. Via resistance sensors, the melt temperature of the individual temperature control zones is continuously measured and compared with the set data. If there are any fluctuations, the controller intervenes and regulates the temperature via the solenoid valves to the set value. The last temperature zone in the upper area of the machine can be used either for cooling or for heating as a post-heating stage.
